The harvest is in. This is where it all really begins

A few days ago, I was telling you about the harvest, those suspended moments in the vineyard, plot after plot.

Since then, the grapes have gone into the vats.

And I was lucky enough to talk with winemakers for whom these weeks are, in reality, the most decisive of the year.

Every vat has its story:

its plot of origin

its harvest date

its type of vinification

its ageing choices

A winemaker can tell you, vat by vat, why this one will go into barrels and that one will stay in stainless steel. Why this lot will wait two more years before being bottled.

It is a precise, meticulous memory, sometimes passed down over several generations.

And this is where something obvious, and too often forgotten, comes into play:

Traceability is not a constraint added after the fact. It already exists, in the mind and the notebooks of every winemaker.

At FIDEwine, our job is not to create that memory.

It is to make sure it is never lost between the cellar and the consumer’s glass, 10,000 km away.

Thank you to everyone who takes the time, in the middle of vinification, to open their cellars to us and tell us about their choices.

These are the stories that, tomorrow, will travel with every bottle.
